Banana Crumb Muffins

As my little toddler was having a sleepover at his Nan’s, I had some free time this morning and couldn’t resist the urge to bake (I totally blame Great British Bake Off being back on our screens!).

I had some overripe bananas in the fruit bowl so they gave me an idea. A quick browse online showed up lots of yummy recipe ideas for bananas. A recipe for Banana Crumb Muffins on caught my eye and I set about measuring out ingredients.

I found this recipe incredibly easy to make, and made it by hand so don’t worry about getting out your big kitchen mixers. 



The muffin mix was never going to look pretty with banana mashed into it but trust me and don’t give up, it will work!


The recipe yielded a large quantity of crumb topping and I  must admit I got scared and only gave a modest sprinkle to each muffin. It works but next time I will definitely be using more. 


Excuse my use of a standard cupcake tin as I can’t find my muffin one! 





18 minutes in the oven and they were perfectly cooked from top to bottom. 


If you have got overripe bananas in your house, I 100% recommend this recipe as something yummy to turn them into. Even if your bananas look so black you think they are only suitable for the bin, don’t, they will make brilliant muffins. 

Now excuse me, I’m off to eat one with a cuppa… ahhhh…
